  • 500 g chicken breast or thighs
  • 500 g potatoes
  • 1 tbsp olive oil
  • 1 tsp paprika
  • ½ tsp garlic powder
  • Salt and pepper
  • Cucumber-tomato salad

METHOD

  1. Heat oven to 220°C.
  2. Cut potatoes and chicken into even pieces.
  3. Toss with oil and seasonings; roast 25–30 min until cooked through.
  4. Serve with fresh salad and yogurt sauce.

One-pan tomato pasta

Easy Tomato Spinach Pasta

  • 250 g pasta
  • 1 onion, diced

  • 400 g lean ground beef

  • 200 g red lentils

  • 400 g chopped tomatoes

  • 400 ml vegetable stock

  2. Add curry powder, tomatoes, lentils and stock.

  4. Stir in coconut milk and serve with rice.
